How to make amazing burgers out of leftover soup

If you can’t tell by my posts lately, I love soup! I love leftover soup too but after about 3 days of it, I’m ready for something new. That’s when I usually ship it off to my hubby to share with the guys at work. I learned a cool new way to make burgers from leftover soup from my favorite vegan food blogger Melomeals: Vegan For $3.33 A Day.

Here’s my second try at this, I used leftover Red Lentil, Chickpea & Chili Soup for the burger and served it on rosemary sourdough bread with caramelized onions, spinach and Southwestern Chipotle Sauce. It was so good… like “party-in-your-mouth” good!!

Leftover Red Lentil, Chickpea & Chili Soup Burger with Chipotle Dressing/Sauce

First, I tried it out on leftover Chipotle Split Pea Soup and it was excellent! My hubby and toddler loved it and my hubby requested I put together a batch for him to take to work.

Here’s how you do it:

* Take 1 cup of leftover soup and add it with a liberal 1/2 cup rolled oats and 1 Tbsp golden flax meal…. and that’s it!

* Mix and place in fridge for several hours or overnight – I did overnight, worked out great!

* Shape into patties and cook in cast iron pan on high heat until done.

  2. I’m a soup lover too, and this is a great idea. But I can’t eat oats. What could replace them? I’m wondering about more cornmeal or a GF hot cereal like millet grits. Or maybe dried beans which could absorb the liquid overnight. They’d still need to be cooked a little…hmmm, thinking out loud.

    • Maybe cooked quinoa? Millet? I don’t think dried beans would work but if you try it let me know!!

      Try more cornmeal or TVP, leftover rice or noodles, nutritional yeast, etc. I like to add an egg sometimes. Maybe rye or buckwheat flour?

  3. I never thought of using up left over soup to make burgers or patties, I will give it a try when I have left over soup next which should be soon as it’s winter time here in Australia and like you I love making big pots of soup.

    Just want to say I really enjoy your blog. I discovered it recently after buying the Whole Foods California Quinoa. It was so good, I googled the recipe and came across your blog. I tried these burgers with my favorite leftover veggie chili. I have to say I was skeptical, but they held together very well and tasted great! I served bread/bun-less topped with salsa and avocado. I did substitute Chia seeds because I didn’t have any flaxseed on hand. Thanks – I’ll definitely be trying more!
