Sweet Potato & Lentil Soup

We all really enjoyed this soup! Ava took one bite and said “Yummy!”… that rarely happens!! I decided to puree part of the soup with my immersion blender after taking these photos and it turned out even better. Enjoy!

BEST Lentil & Tomato Soup

Another one pot meal! I know it’s a little too hot for soup but hey, it works in our house right now. Our 1-year old loves soup so it’s an easy reheat meal when I’m super busy. Plus he really enjoys the burgers I make out of the leftovers!

This soup is REALLY GOOD! My hubby said it’s in the top 5! The caramelized onions and garlic really make this soup so if you can, take the time to do that first!! You won’t regret it!

BEST Lentil & Tomato Soup

Original recipe from Food.com.

Ingredients

  • 1 cup lentils, rinsed – I used red lentils
  • 7 cups water
  • Water for saute OR cooking spray
  • 2 medium onions, chopped

  • 4 stalks of celery, diced

  • 2 teaspoons ground coriander
  • 1/2 teaspoon black pepper

  • 1/3 – 1/2 cup fresh parsley, chopped – I used about 1/2 cup

  1. Heat soup pot, add in onions and garlic and sauté on medium heat, stirring often, until everything turns a deep golden brown – took me about 30 minutes.
  2. Add in brown rice, spices, carrot, celery, potato, tomatoes, and spices and sauté for another 5 minutes. DO NOT ADD WATER, LENTILS, PARSLEY OR LEMON JUICE YET.
  3. Stir in lentils and water and bring to boil. Cover and cook over low heat for 30-40 minutes or until rice and lentils are done.
  4. Stir in lemon juice and parsley, serve hot.

Ready to serve!

Creamy Broccoli & Kale Soup

Our 9 month old son is now walking along furniture, my how time flies! He’s still not sleeping well at night which means I am not sleeping well either so fast meals are my thing lately. I’ve been making dinner during nap time which means break time doesn’t really happen for me until both kids go to bed. I’m not always good about going to bed early because geez… that’s my only free time! It’s a vicious cycle but hey, it works.

I received a large bunch of broccoli in my CSA box this week and decided to make one of the broccoli soups I have bookmarked in my 1357 list of recipes I want to try. This turned out really good! It’s so easy to make and super healthy too. Our toddler loved it! First time we had it, I served it with brown rice mixed in to add in a serving of grain. The second time I added brown rice and a hunk of sweet potato I had leftover, that was a great combo! Both times I added a squeeze of lemon on top. So good!

Creamy Broccoli & Kale Soup

This recipe is from a unprocessed food blog For the Love of Food. I really like this blog and I’ve bookmarked several recipes to try. I like her unprocessed approach, so nice to be able to make a recipe without changing it a ton.

Creamy Broccoli and Kale Soup
Water, broth or bean liquid for sautéing
1 medium yellow onion, diced
2 garlic cloves, minced
4 cups vegetable stock – I used low sodium
1 bunch broccoli, chopped (6 cups)
1/2 bunch kale, chopped (4 cups) – I added extra because I LOVE my kale!
2 Tablespoons tahini
Coarse sea salt and freshly ground black pepper
1 lemon, cut into wedges
Heat water, broth or bean liquid in a medium pot over medium heat.  Add the onion and garlic and sauté about 3 minutes.  Add stock and bring to a boil.  Add the broccoli and kale, turn heat to low, and let simmer for five minutes.  Remove from heat and stir in tahini.  Season with salt and pepper, if desired.
Blend the soup by using an immersion blender or transfering it to a regular blender. (If using a regular blender, be very careful as the steam can sometimes cause the lid to blow off.  I recommend allowing the soup to cool for a few minutes, then blending small batches on medium speed while holding the lid down with a large pot holder or towel in my hand).
Squeeze lemon wedge over soup.  Serve hot.

Saute onions and garlic in water, bean cooking liquid or broth

Add broth and bring to boil. Add chopped broccoli and kale and simmer.

Add tahini. I used my immersion blender to puree this soup

Serve with lemon

Day 2: Served with brown rice and sweet potato

Creamy Cauliflower Soup

I used to make cauliflower with olive oil, rosemary, 16 cloves of garlic (yes, 16!) and salt but since I’ve stopped using added oils and salt I’ve had to find new recipes. This soup turned out really good! It’s nice and creamy yet dairy-free, oil-free and very low salt (depending on what you decide to use for broth). The cashews are an excellent addition. Our toddler loved this soup!

Creamy Cauliflower Soup

The original recipe is from Healthy Blender Recipes. I added lemon thyme, black pepper and cayenne sprinkled on top. I chose buckwheat for my grain since that’s what I had on hand for the day.

  • 8 cups of strong vegetable broth – I used half low-sodium veggie broth/half water
  • Leftover bean cooking liquid for sautéing OR just use water if you’re trying to stay oil-free (Olive oil if you’re not) **NOTE: I save the leftover bean cooking liquid from my pressure cooker and use it in place of oil in recipes… works great and it’s much better for you! I use mostly chickpea :-)
  • 1 whole head of garlic roasted
  • The white part of 2-3 leeks washed and chopped
  • 1 large head of cauliflower chopped
  • 1/2 tsp dried lemon thyme (or regular thyme is fine)
  • 1/2 cup raw cashews (you could also use raw blanched almonds) – soaked in hot water for around 20 minutes
  • 4 Tbsp chives chopped finely to garnish
  • cayenne pepper to serve on top
  • white or black pepper, to taste
  • organic brown rice, quinoa or millet to serve – I served with buckwheat
  1. Place the whole head of garlic unpeeled in an oven at 400 F for about 30 minutes. Allow to cool slightly. (This makes the house smell REALLY GOOD!)
  2. In a large saucepan fry the leek in a little bean cooking liquid until soft. (About 3 minutes)
  3. Add in the cauliflower and stir for a couple of minutes until well coated. Squeeze in the roasted garlic pulp.
  4. Cover with the vegetable broth/water. Bring to the boil, reduce the heat to a medium flame, and simmer partially covered for about 30 minutes until the cauliflower is soft.
  5. Let the mixture cool enough to put batches in the blender (I like to use a Vitamix), and puree with the cashews until smooth and creamy.
  6. Transfer to a clean pot and heat on low to serve. Season with salt (if you wish) and white or black pepper, to taste.
  7. To serve – top each bowl with a grain ball and a generous sprinkle of chives. Top with a little cayenne pepper.

This soup serves six people and makes really great leftovers!

Saute leeks in leftover bean liquid

Add cauliflower and roasted garlic

Add broth, bring to a boil and simmer half-covered for 30 minutes

Time to blend soup with cashews!

Yummy!!

Taco Soup with Quinoa

I was craving taco soup when I found this recipe with quinoa added… score! Why didn’t I think of that?!? Leave it to Nava Atlas to think of something like that, she has awesome recipes! This recipe is from her site VegKitchen.com. My toddler ate two bowls of this!

Taco Soup with Quinoa

TODDLER APPROVED!!

I omitted the oil and I used no-salt added, tetra-packed tomatoes since we are working towards lowering our salt tolerance and eliminating our added oil consumption.

Taco Soup

  • 1/2 cup raw bulgur or quinoa (I doubled this)
  • 1 large onion, chopped
  • 2 to 3 cloves garlic, minced
  • 1 medium green bell pepper, finely diced
  • 4 cups cooked or canned pinto beans (from 1 1/2 cups raw beans or two 16-ounce cans, drained and rinsed) – I USED CANNED BEANS, TRYING TO USE THEM UP!
  • One 28-ounce can salt-free crushed tomatoes
  • 1/4 cup chopped mild green chilies, fresh or canned, optional
  • 1/4 cup chopped fresh cilantro, optional
  • 1 to 2 teaspoons chili powder, or to taste
  • 1 teaspoon ground cumin
  • 1 teaspoon dried oregano

Garnishes:

  • 1 to 1 1/2 cups grated cheddar-style nondairy cheese (I like Follow Your Heart Nacho)
  • Thinly shredded romaine or green leaf lettuce (I used cilantro)
  • Finely diced firm, ripe tomatoes (about 1 cup)
  • Large triangular stone-ground tortilla chips

Bring 1 cup of  water to a boil in a small saucepan. Add the grain and simmer, covered, for 15 minutes, or until the water is absorbed.

Saute the onion in a little bit of water over medium heat until translucent. Add the garlic and bell pepper and continue to sauté, stirring frequently, until all are golden. Add more water if the mixture is sticking.

Add the remaining ingredients, except the garnishes, plus the cooked grain and 3 cups water. Bring to a rapid simmer, then lower the heat. Cover and simmer gently for 10 to 15 minutes, then remove from the heat.

Top with some grated cheese (I used Follow Your Heart Nacho), shredded lettuce (I used cilantro), and diced tomatoes. Serve with tortilla chips.

I like Pomi brand tomatoes

Saute onions, green peppers and garlic

Make your quinoa

Add all ingredients together (except for toppings)

Bring to strong simmer, cover and cook for 10-15 minutes. (P.S. I LOVE my new dutch oven!!!

Serve with chips, vegan cheeze and cilantro!

Lick-The-Bowl Cheezy Cabbage Potato Soup

This is the ultimate comfort soup! It’s SO GOOD you’ll want to lick the bowl when you’re done! The cabbage and mushrooms are such nice additions too.

Cheezy Cabbage Potato Soup

This recipe is from Melomeals: Vegan For $3.33 A Day (FAV!) I added sliced baby portobello mushrooms because I had them and they were a nice addition! The ingredient list is long but this is actually a really easy soup to make so don’t be intimidated!!

Cooking spray (optional, you can water saute if you’re oil-free)

1 onion (around 1 cup, diced)

1 tsp dried thyme

1 tsp dried dill

1 tsp paprika

1/2 tsp caraway seeds

5 cloves garlic

pinch salt

6 cups shredded green cabbage (around 1/2 a medium head) – (I used the fresh organic cabbage from my CSA box, YUMMY!!!)

1 (8oz) pack of sliced baby portobello mushrooms (white mushrooms would be okay too)

2 cups diced potatoes (around 2 medium) – (Used the organic potatoes from my CSA, so good!)

1-2 canned chipotle pepper in adobo (use 1 if you don’t like heat in your soup) – I use 2

6 cups water

1.5 bouillon cubes – I use no salt added veggie broth cubes

black pepper to taste

Method:
1. In a large, heavy bottomed soup pan over medium heat spray with cooking spray add the onions, garlic and spices. Cook for several minutes, or until the onion is translucent.

2. Now, add the cabbage, mushrooms, potatoes and chipotle pepper(s) and coat with the spice/onion mixture for several more minutes. This part is tricky because the veggies haven’t cooked down yet so use two spoons to mix.

3. Add the water and bouillon and bring to a boil, uncovered. Simmer for several minutes, then turn the heat down to low and cover and allow the potatoes and cabbage to cook.

4. Meanwhile, prepare the ‘cheese/cream mixture’

Cheesy Cream:

1/2 block lite tofu – I used half a box of Organic Mori -Nu Firm Silken Tofu

1/4 cup nutritional yeast

1.5 Tbsp tahini

2 tsp dijon mustard

2 small cloves garlic – I used about 1 Tbsp minced garlic

1 tsp yellow mustard (prepared)

2 Tbsp umeboshi vinegar (or 1 T soy sauce and 1 T lemon juice)

1 Tbsp lemon juice

Directions:

1. Process all of the above in a food processor until totally smooth.

2. When the soup is done take it off the heat (this is VERY important or the mixture will curdle) and stir the cream mixture into the pot.

3. Let it sit, covered for 5 minutes and taste for salt/pepper.

4. If you’d like, add around 3 cups of the soup to the food processor and puree for a creamier soup (and to get all of the cheesy sauce out!). Add the pureed soup back into the pot – THIS IS WHAT I DID

This makes around 8 cups of soup… trust me you will LOVE the leftovers! This soup gets better the longer it sits in the fridge too!

Saute onion, garlic and spices. Add in cabbage, potato, mushrooms and chipotle

Add water and bouillon

Make Cheezy Cream in food processor (only takes a minute!)

I added 2+ cups of soup into the food processor with cheeze, blended then poured back into main soup

Poured back in

Yummy!

Yummy Bean Soup

This soup is delicious! It’s a little spicy and very satisfying with a side of toasted naan (if you eat bread, we do no more than twice a week) and a glass of red wine (or hemp milk for my toddler!). This recipe is from HealthyMammas.com – home of  the recently made Creamy Dreamy Superfood Pudding and Black Bean & Corn Quinoa (2 more fabulous recipes!).  This recipe is toddler approved, she ate the whole bowl but she commented on it being “spicy Mommy spicy” the whole time… you may want to back off the chili powder if you have a spice sensitive child. My daughter will eat wasabi peas and dried chili mango so she may be the exception. :-)

Bean Soup

Ingredients (Serves 6-8)

  • 1 7/8 lbs 15 bean soup mix (I used the 8-bean soup mix from my CSA – about 5 1/2 cups)
  • 1 quart low sodium vegetable broth
  • 1 tablespoon olive oil (you can use veggie broth or water to sauté instead – I used broth)
  • 1 large onion, chopped
  • 1 garlic clove, chopped
  • 1 box frozen chopped spinach, or 10 oz of fresh, chopped spinach (I used fresh – 2 bunches organic spinach)
  • 2 carrots, thinly sliced (I used leftover shredded carrots from Healthy Veggie Muffins)
  • 1 (15 ounce) can diced tomatoes, undrained (I used fire roasted with garlic)
  • 8 tablespoons lemon juice (about 2 lemons worth) – this makes it!!
  • 2 bay leaves
  • 3 dashes Tabasco sauce (Didn’t have any so I used a big squirt of Sriracha)
  • 1 tablespoon oregano
  • 2 teaspoons chili powder
  • 2 teaspoons ground thyme
  • 1 teaspoon cayenne pepper
  • 1/2 tablespoon ground black pepper
  • 1/2 tablespoon salt (optional)

Instructions

  • Soak beans overnight, or at least 8 hours. Drain and rinse.
  • Cook beans in water until just tender by simmering on the stove in 2 qts. water for 1 1/2 hours. (or more) (Can also cook in slower cooker or pressure cooker.).
  • Shortly before the beans are done, saute onion and garlic in oil (or veggie broth) until slightly brown.
  • When beans are done, drain half the cooking water.
  • Add all remaining ingredients and simmer, uncovered, for 40-60 minutes, stirring occasionally. Adjust seasoning to taste.

Beans are cooked, adding in remaining ingredients (except spinach)

Added chopped spinach

Delish!!

Black Bean & Corn Quinoa

This is very healthy, easy to make and delicious! My husband and toddler LOVED it! You could eat this dish with a ton of things, we had it with wheat tortillas, shredded carrots, cilantro and leftover TVP Taco “Meat” and a side of Garlic Yu Choy.

Black Bean & Corn Quinoa

I found this recipe on a new food blog I’ve been checking out – Healthy Mammas. I made their Creamy Dreamy Superfood Pudding a few days ago and that was really good!

Black Bean & Corn Quinoa

Ingredients (serves 4 to 6)

  • 1/2 onion finely chopped
  • 3 cloves minced garlic
  • 3/4 cup uncooked quinoa
  • 2 cups organic veggie broth (plus a bit more for sauteing your onions and garlic)
  • 2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper (optional – I used 1/8 tsp)
  • salt and pepper to taste
  • 1 cup frozen corn
  • 1 (15oz) can black beans drained and rinsed
  • Optional (Throw in a can of drained diced tomatoes – OR serve with some fresh salsa) – I added one can of Fire Roasted Diced Tomatoes with Garlic… YUM!
  • Chopped cilantro, to top (optional but good!)

Instructions

  • Saute onion and garlic in a few tablespoons of veggie broth over medium heat until soft and almost translucent.
  • Add the garlic when the onions are about 1/2 done…you may need to add a little more broth as they cook to keep them moist and keep them from sticking.
  • Mix in quinoa and cover with 2 cups veggie broth.
  • Season with spices and salt & pepper.
  • Bring to boil, reduce heat to low, and simmer until most of the liquid is gone…about 10 to 15min.
  • Stir in corn, black beans and diced tomatoes – continue to cook on low heat for about 5 more minutes until all liquid is absorbed and everything is heated through. (add a little extra veggie broth if needed)
  • Taste and season with additional sea salt if needed.
  • Enjoy!

Saute onions & garlic in broth

Add quinoa, broth & spices

Add corn & black beans

Add tomatoes (if using)

I used these, they're yummy!

Chipotle Split Pea Soup

I did it, I finished a whole can of chipotle chiles in adobo sauce! I always buy a can, use one or two for a recipe and the rest of it sits in the fridge and rots.

As you can see, I’ve been on a soup kick this week due to the recent rain. I love soup, it’s so easy and almost everything you need ends up in one warm bowl of goodness!

This is from… you guessed it! Melomeals: Vegan For $3.33 A Day vegan food blog. She has so many delicious recipes, I may just cook my way through her whole site!

First off, this soup smells SO GOOD when it’s cooking… the kind of smell where your neighbors peek their heads over the fence and say “What are you cooking? That smells awesome!”. Not only does it smell good, it tastes good too! Plus it’s easy to make, cheap and very healthy (protein & fiber!), what more do you need!

I served this soup with leftover Chickpea Flatbread - cut into pieces and toasted. My hubby ate his flatbread with Southwestern Chipotle Sauce, his new everyday condiment of choice.

Chipotle Broccoli Quinoa Soup

This tastes like regular broccoli cheese soup with a kick of chipotle but it’s really healthy, easy to make and dairy-free! The creamy hummus and the nutritional yeast give it a cheezy taste and texture. It only takes about 30 minutes to make. My husband LOVES this soup and scarfed down two bowls for dinner tonight.

I used a batch of Chipotle Hummus to flavor this soup per the recipe from Melomeals: Vegan For $3.33 A Day.

Here’s her recipe for the soup:

* 1 T olive oil
* 1 onion, diced
* 1/2 red pepper, chopped finely
* 6 cloves garlic, minced
* 1 t dried basil
* Several grates fresh nutmeg
* 1/2 t chipotle powder
* 16 oz frozen broccoli florets (or 1 pound fresh)
* 2 cups of  chipotle hummus
* 4 c water/stock
* Bouillon cube if using water
* 1/2 cup quinoa
* 1/4 cup nutritional yeast
* Salt/pepper to taste
* 1 T umeboshi vinegar (optional, but VERY good)

Method:
- Sauté the onion, pepper, garlic, basil, nutmeg and chipotle powder until the onion is soft.

- Add the broccoli, hummus and stock. Bring to a boil for several minutes.

- Turn heat down to low and add the quinoa. Cover and simmer for 15 minutes.

- Turn off heat and stir in the nutritional yeast and umeboshi vinegar then season with salt and lots of freshly ground black pepper.
