Easy Curried Lentils & Spaghetti Squash

Things have been so hectic lately… my 4 month old has been up most of the past 5 or so nights and I’m so tired! He’s usually such a great sleeper, these sleep hiccups are tough but I know they usually don’t last long so I’m hopeful. My cooking slacks when I’m super tired so I’ve been making a few of my favorite easy dishes, this is one of them. My toddler likes this a lot and its easy for her to get on her fork so that makes her happy!

Easy Curried Lentils & Spaghetti Squash

This recipe is from Melomeals: Vegan For $3.33 A Day and it’s really good… not to mention easy to make!

Spicy Lentils and Spaghetti Squash
  • 1 tablespoon coconut oil
  • ½ teaspoon cumin seeds
  • 2 tablespoons curry powder – I used Kashmiri Curry powder from World Spice Merchant
  • 1 onion, diced
  • ½ poblano pepper (or green pepper), diced
  • Heaping ¼ teaspoon cinnamon
  • Crushed red pepper flakes to taste – (I omitted this in the main dish so my toddler would eat it)
  • 1 large carrot, diced
  • 5 big cloves garlic
  • 2-3 tablespoons chopped fresh ginger
  • Tony’s creole seasoning to taste – I used my creole seasoning from World Spice Merchant
  • 1 cup water
  • ½ cup salsa
  • 2 cups cooked spaghetti squash (I used the boil method – drop whole squash into boiling water and cook for 20-30 minutes or until skin is easily pierced with a fork)
  • 1 cup cooked lentils
  • Juice of 1 lemon – used a Meyer lemon from my CSA
  • ½ cup cilantro
  • Siracha to taste
  1. Saute the spices, onion, garlic, ginger, veggies and creole seasoning for several minutes.
  2. Add water, salsa, squash and lentils.
  3. Cover and cook over medium hi heat for 15 minutes
  4. Finish with juice of 1 lemon, siracha, cilantro and season with salt/pepper to taste
  5. ENJOY! serves 2

Saute onion, garlic, ginger, veggies and creole seasoning

I served it with roasted sweet potatoes, delish!

Yummy Bean Soup

This soup is delicious! It’s a little spicy and very satisfying with a side of toasted naan (if you eat bread, we do no more than twice a week) and a glass of red wine (or hemp milk for my toddler!). This recipe is from HealthyMammas.com – home of  the recently made Creamy Dreamy Superfood Pudding and Black Bean & Corn Quinoa (2 more fabulous recipes!).  This recipe is toddler approved, she ate the whole bowl but she commented on it being “spicy Mommy spicy” the whole time… you may want to back off the chili powder if you have a spice sensitive child. My daughter will eat wasabi peas and dried chili mango so she may be the exception. 🙂

Bean Soup

Ingredients (Serves 6-8)

  • 1 7/8 lbs 15 bean soup mix (I used the 8-bean soup mix from my CSA – about 5 1/2 cups)
  • 1 quart low sodium vegetable broth
  • 1 tablespoon olive oil (you can use veggie broth or water to sauté instead – I used broth)
  • 1 large onion, chopped
  • 1 garlic clove, chopped
  • 1 box frozen chopped spinach, or 10 oz of fresh, chopped spinach (I used fresh – 2 bunches organic spinach)
  • 2 carrots, thinly sliced (I used leftover shredded carrots from Healthy Veggie Muffins)
  • 1 (15 ounce) can diced tomatoes, undrained (I used fire roasted with garlic)
  • 8 tablespoons lemon juice (about 2 lemons worth) – this makes it!!
  • 2 bay leaves
  • 3 dashes Tabasco sauce (Didn’t have any so I used a big squirt of Sriracha)
  • 1 tablespoon oregano
  • 2 teaspoons chili powder
  • 2 teaspoons ground thyme
  • 1 teaspoon cayenne pepper
  • 1/2 tablespoon ground black pepper
  • 1/2 tablespoon salt (optional)

Instructions

  • Soak beans overnight, or at least 8 hours. Drain and rinse.
  • Cook beans in water until just tender by simmering on the stove in 2 qts. water for 1 1/2 hours. (or more) (Can also cook in slower cooker or pressure cooker.).
  • Shortly before the beans are done, saute onion and garlic in oil (or veggie broth) until slightly brown.
  • When beans are done, drain half the cooking water.
  • Add all remaining ingredients and simmer, uncovered, for 40-60 minutes, stirring occasionally. Adjust seasoning to taste.

Beans are cooked, adding in remaining ingredients (except spinach)

Added chopped spinach

Delish!!

Red Lentil Thai Chili

I served this chili (and the Spicy Broccoli Cheeze Soup) at a party yesterday and it was a total hit, some people asked for leftovers to-go! It was even better today when I had it for lunch and dinner. It’s such a unique tasting chili, I really love the curry paste mixed with the sweet potatoes and lime.

This recipe is from one of my favorite vegan food blogs – Post Punk Kitchen. I doubled this recipe and skipped a few steps because I thought it would fit in my crock pot but it didn’t! My hubby had to run to the fire station to borrow a bigger pot.

Water or broth for sautéing
1 large yellow onion, diced medium
1 red bell pepper, seeded and diced medium
3 cloves garlic, minced
2 tablespoons chili powder
1 ½ lbs sweet potatoes cut into ¾ inch chunks
1 cup red lentils
1 teaspoon salt
4 cups vegetable broth
2 15 oz cans kidney beans, drained and rinsed
2 tablespoons Thai red curry paste
1 15 oz can low-fat coconut milk
28 oz can diced tomatoes
½ cup fresh cilantro, plus extra for garnish
Limes for garnish (optional but VERY GOOD WITH IT!)

Preheat a 4-quart pot over medium heat. Saute onions and pepper for 5 to 7 minutes. Add garlic and saute a minute more.

Add chili powder, sweet potatoes, lentils, salt and vegetable broth. Cover and bring to a boil. Let it boil for 15 to 20 minutes, stirring occasionally to prevent burning. When lentils are cooked and sweet potatoes are tender, add the remaining ingredients and heat through.

Taste for salt and seasoning, top with cilantro and lime and serve!

How to make amazing burgers out of leftover soup

If you can’t tell by my posts lately, I love soup! I love leftover soup too but after about 3 days of it, I’m ready for something new. That’s when I usually ship it off to my hubby to share with the guys at work. I learned a cool new way to make burgers from leftover soup from my favorite vegan food blogger Melomeals: Vegan For $3.33 A Day.

Here’s my second try at this, I used leftover Red Lentil, Chickpea & Chili Soup for the burger and served it on rosemary sourdough bread with caramelized onions, spinach and Southwestern Chipotle Sauce. It was so good… like “party-in-your-mouth” good!!

Leftover Red Lentil, Chickpea & Chili Soup Burger with Chipotle Dressing/Sauce

First, I tried it out on leftover Chipotle Split Pea Soup and it was excellent! My hubby and toddler loved it and my hubby requested I put together a batch for him to take to work.

Here’s how you do it:

* Take 1 cup of leftover soup and add it with a liberal 1/2 cup rolled oats and 1 Tbsp golden flax meal…. and that’s it!

* Mix and place in fridge for several hours or overnight – I did overnight, worked out great!

* Shape into patties and cook in cast iron pan on high heat until done.

Chipotle Split Pea Soup

I did it, I finished a whole can of chipotle chiles in adobo sauce! I always buy a can, use one or two for a recipe and the rest of it sits in the fridge and rots.

As you can see, I’ve been on a soup kick this week due to the recent rain. I love soup, it’s so easy and almost everything you need ends up in one warm bowl of goodness!

This is from… you guessed it! Melomeals: Vegan For $3.33 A Day vegan food blog. She has so many delicious recipes, I may just cook my way through her whole site!

First off, this soup smells SO GOOD when it’s cooking… the kind of smell where your neighbors peek their heads over the fence and say “What are you cooking? That smells awesome!”. Not only does it smell good, it tastes good too! Plus it’s easy to make, cheap and very healthy (protein & fiber!), what more do you need!

I served this soup with leftover Chickpea Flatbread – cut into pieces and toasted. My hubby ate his flatbread with Southwestern Chipotle Sauce, his new everyday condiment of choice.

Chipotle Split Pea Soup

Red Lentil, Chickpea & Chili Soup

Now that the weather is finally getting colder, I can make all my favorite soups! My toddler has almost perfected the use of a spoon so the timing is perfect!

This soup is one of our favorites and it’s super easy and healthy. This is similar to my Italian’ish Lentil Tomato Soup but with different spices – more of an Indian curry-type soup.

Ingredients:

Servings: 4

  • 2 teaspoons cumin seeds
  • 1 large pinch chili flakes
  • 1 tablespoon olive oil
  • 1 red onion, chopped
  • 5 ounces red lentils
  • 3 1/2 cups vegetable stock – I use Imagine Brand No-Chicken Broth
  • 1 (14 ounce) can diced tomatoes, undrained
  • 1 cup cooked chickpeas, drained and rinsed (can used canned or homemade) – I pressure cook a pound or so a week and use those rather than canned.
  • Salt & Pepper, to taste
  • 1/4 – 1/2 cup cilantro, chopped
  • Plain soy yogurt  – It’s really good with this, try it!!

Directions:

  1. Heat a large saucepan and dry fry the cumin seeds and chili flakes for 1 min or until they start to jump around the pan and release their aromas. Add the oil and onion, and cook for 5 minutes Stir in the lentils, stock and tomatoes, then bring to the boil. Simmer for 15 mins until the lentils have softened.
  2. Whizz the soup with a stick blender or in a food processor until it is a rough puree, pour back into the pan and add the chickpeas. Heat gently, season well with salt & pepper and stir in the cilantro. Finish with a spoonful of yogurt.
