Green Overnight Oats

We love oatmeal, we eat it almost every morning. I try to spice it up some days but most days it’s the usual raisins, nuts and some type of fruit on top. We’ve been rotating between the usual, the Orange Creamsicle Oatmeal and this one lately. This is really easy to make the night before and it’s great to be able to pull breakfast out of the fridge, heat it up and go. I’m out the door in a hurry most mornings, rushing off to Crossfit so this recipe is perfect!

Not to mention, it’s a GREAT way to sneak in your much needed serving of greens per meal! The added chia seeds are a double bonus. Our toddler LOVES this!

The original recipe is from a fantastic vegan food blog, Oh She Glows. If you haven’t checked out her site yet, set aside some time to do so. She has a bunch of really great recipes!!

The original recipe was written to make one serving but I’ve adjusted it to make a bigger batch, with a few other changes. 🙂 Sometimes I add 1/2 cup of white beans to the mix too.

Green Overnight Oats

Ingredients:

  • 2-3 large handful fresh spinach or 2 handfuls of kale
  • 2 large ripe bananas
  • 3 tbsp chia seeds (necessary for thickening)
  • 2 cups almond milk 
  • 1 cup regular, rolled oats

1. In a blender, blend together the spinach, banana, chia seeds, and almond milk until smooth.

2. In a large plastic or glass bowl/container, add the oats and then pour the smoothie on top. Stir well until combined.

3. Place in fridge (uncovered is fine – I always cover it myself) overnight. Give it a good stir in the morning and then enjoy it cold, straight from the fridge or warm it up a bit, if you prefer. 

We like to add walnuts, shredded unsweetened coconut, berries, bananas…. anything you wish!

Add all ingredients (except oats) to blender or food processor and blend well

Add oats to your container

Ready to combine!

Stir in the green “smoothie” and stir until combined

Store in your fridge overnight. Mine is nestled next to my organic spring salad mix and leftover kale salad 🙂

Take it out in the morning, stir and serve with your favorite toppings!

10-Minute Energizing Oatmeal

I make this oatmeal often because it’s quick, healthy and filling… great for toddlers with tons of energy or Moms who may not have enough! I served this with a little Kal Brand Stevia, Almond Milk and diced persimmons from my CSA delivery (Abundant Harvest Organics)… delicious!

This is all you need to make this recipe:

Prep and Cook Time: 10 minutesIngredients:

  • 1 cup old-fashioned rolled oats
  • 2 cups water
  • 1/2 tsp cinnamon
  • 1/4 cup raisins
  • 1/4 sliced almonds, walnuts or raw pumpkin seeds (any nuts you like!)
  • 1 cup soymilk or almond milk

Directions:

  1. Bring the water to a boil in a saucepan, then turn the heat to low and add the oats.
  2. Cook for about 5 minutes, stirring regularly so that the oatmeal will not clump together. Add cinnamon, raisins and almonds, stir, cover the pan and turn off heat. Let sit for 5 minutes. Serve with fruit, milk and sweetener, if desired.

Serves 2

Simple Coconut, Ginger, Carrot Breakfast Bread (Sugar, Soy & Wheat Free)

Since both my kids decided to nap at the same time today, I had a chance to make this breakfast bread recipe I’ve had my eye on for a few weeks. I’m always on the lookout for healthy but fast breakfast options for busy mornings and this works perfectly! I had leftover shredded carrots from making the Healthy Veggie Muffins a couple of days ago and Chipotle Split Pea Soup last night so this was a perfect way to use them up!

Breakfast bread with peanut butter, orange slices and a glass of almond milk… Yummy!! Toddler and hubby loved this and ate it throughout the day!

The original recipe is from… you guessed it! Melomeals: Vegan For $3.33 A Day, my all-time favorite recipe source and vegan food blog. I changed it up a bit over the past year, I make it often because it’s really good! If you haven’t explored her blog, PLEASE do so!!!

  • 2 cups old-fashioned oats
  • 1 tablespoon baking powder
  • 1 tablespoon cinnamon
  • 1/4 – 1/2 teaspoon Kal Stevia Powder (I use 1/4 tsp)
  • ¼ teaspoon cloves
  • ¼ teaspoon cardamom
  • ¼ teaspoon black pepper
  • 4 tablespoons fresh ginger
  • ¾ cup dried unsweetened coconut
  • 2 large carrots
  • 1 – 15 oz can of white beans and their liquid
  • 1/3 cup water
  • 2 tablespoons psyllium husk
  • 1/2 cup unsweetened applesauce – I like to use cinnamon
  • 1 tablespoon vinegar – I used apple cider vinegar
Pre-heat Oven to 375
1.       In a food processor, process oats into flour; place in mixing bowl with the rest of the dry ingredients.
2.       Next, pulse the ginger and carrots in the food processor until really broken up
3.       Add the beans, water, psyllium, applesauce and vinegar and puree until smooth
4.       Add to the dry ingredients
5.       Grease an 8 by 8 square pan and bake at 375 for 45 minutes.
6.       Let cool completely before serving

Add wet to dry
Pour into pan and flatten

Easy Breakfast Bread!

Apple Cinnamon Breakfast Quinoa

I love quinoa (pronounced “Keen-Wah”) for breakfast! It has such a warm nutty flavor!

I have a few recipes I follow or I just throw whatever I have in the cupboard in my quinoa – raisins, dried cranberries, sliced almonds, chia seeds, walnuts, etc. I don’t usually follow a recipe but I figured posting accurate amounts of everything would help if someone wanted to try quinoa for breakfast.

I buy my quinoa at Costco – It’s about $9 for a big bag and it’s organic.

This recipe is from Happy Healthy Mama food blog, it’s really easy and I bet you have all these ingredients in your kitchen! Her other breakfast recipe, Orange Banana Walnut Breakfast Quinoa, is our favorite too!

Breakfast To Go

The makings of a fast breakfast

In order for me to get my two kids out of the house early enough to walk/run to Stroller Strides (exercise class with your stroller) I have to eat fast. I have to eat something that will stick with me because I won’t get another chance to eat again for awhile.

I rotate protein powders/meal replacements because I can’t have the same thing every day.

Right now I’m about halfway through this Vega Complete Whole Food Health Optimizer – a little on the expensive side but it averages out to be about $3.00 a meal so that’s okay. The taste is a little earthy so I mix it with vanilla almond milk, frozen berries, banana and a little stevia powder (Kal brand is the best!). Sometimes I add greens (kale, collards, chard) if they are wilting in the fridge, sometimes a carrot or celery. Add a little flaxseed oil and chia seeds (think cha-cha-cha- chia!) and presto… I’m full until lunch! Plus I am getting about 30-35 grams of protein and 21 grams of fiber.

Most people do not get enough fiber – you generally need between 35-45 grams per day. Chia seeds are very high in fiber and an excellent source of calcium, iron and magnesium. Almond milk has almost half of the calcium you need on one day in one serving plus it tastes so good!
