Balsamic-Glazed Chickpeas & Mustard Greens

I really like mustard greens, if you’ve never tried them this is a great starting point! This can be served as a side dish or a warm dinner salad. I like mine over quinoa for dinner! My toddler enjoyed this, she likes chasing the chickpeas around her plate. 🙂

Balsamic-Glazed Chickpeas & Mustard Greens

This recipe is from one of my favorite plant-based food blogs, Fat Free Vegan. She has such delicious recipes and lots of them! I changed the original recipe in an effort to reduce my sodium intake. 🙂

Ingredients

  • 10 ounces mustard greens – (I used one whole bunch)
  • 1/2 large red onion, thinly sliced
  • 4-6 tablespoons vegetable broth, divided – (I used water to saute to reduce sodium)
  • 4 cloves garlic, chopped
  • 1 pinch red pepper flakes
  • 1/2 teaspoon salt (optional)
  • 2 tablespoons balsamic vinegar
  • 1/2 teaspoon soy sauce – (I used light soy sauce)
  • 1/4 teaspoon agave nectar or sugar – (I used agave)
  • 1 cup cooked chickpeas, rinsed and drained – (I used cooked beans but you can used one can too)

Instructions

  1. Remove any large stems from the greens and discard. Tear the leaves into bite-sized pieces.
  2. In a deep pot or wok, sauté the onion in a tablespoon or two of vegetable broth (or water saute) until mostly faded to pink, about 4 minutes. Add the chopped garlic and red pepper and another tablespoon of broth and cook, stirring, for another minute. Add the mustard greens, 2 tablespoons of broth, and cook, stirring, until greens are wilted but still bright green, about 3-5 minutes. Stir in the salt, if using. Remove greens and onions from pan with a slotted spoon and place in a serving dish, leaving any liquid in pan.
  3. Add the balsamic vinegar, soy sauce, and agave or sugar to the liquid in the pan (if there is no liquid, add 2 tablespoons of broth). Add the chickpeas and cook, stirring, over medium heat until the liquid is reduced by about half. Spoon the chickpeas over the greens and drizzle the sauce over all.
  4. Serve warm, with additional balsamic vinegar at the table.
  5. YUMMY!!

Saute onions, add garlic and red pepper

Add greens, cook until wilted but still bright green. Remove from pan and place in serving dish.

Spicy Lemon Chard

This is one of my favorite lunch recipes, this flavor mixture is addicting! I usually eat a whole bunch of chard for lunch using this recipe, sometimes with a side of whole wheat bread or rice. It’s quick and easy to make too, great for busy people! This is a unique spice blend that most people either love or hate… I LOVE IT and I hope you do too!

Spicy Lemon Chard

  • 1 -2 bunches of chard (leaves AND stems) ,washed and chopped – I use red, green or rainbow… ALL GOOD! I use 1 bunch but you may want to use 2 the first time, or half the spices (to make sure you like it first!)
  • 2 tablespoons vegetable oil – you can use water or veggie broth if you’re trying to cut out oil. I use broth and it works perfectly
  • 1-3 tablespoon minced fresh garlic
  • 1 tablespoon paprika
  • 2 teaspoons ground cumin
  • 2 tablespoons fresh lemon juice

Directions:

  1. Heat the oil (water or broth) in a large skillet and saute the garlic gently until golden. Add the chard, paprika, cumin, lemon juice, salt and pepper to taste and mix well.
  2. Cook for 5 minutes, stirring occasionally. Let cool. Serve at room temperature or chilled.

I usually choose red chard but any will do

Use the stalks too for added fiber and crunch!

Wash and dry chard and tear leaves from stems - chop

Easy ingredients!

Saute garlic first... I use jarred garlic when I'm in a hurry

Add in stems for a minute or two, then add in chopped leaves

Add spices/lemon and saute for a few minutes

Serve cold'ish

 

Black Bean & Corn Quinoa

This is very healthy, easy to make and delicious! My husband and toddler LOVED it! You could eat this dish with a ton of things, we had it with wheat tortillas, shredded carrots, cilantro and leftover TVP Taco “Meat” and a side of Garlic Yu Choy.

I found this recipe on a new food blog I’ve been checking out – Healthy Mammas. I made their Creamy Dreamy Superfood Pudding a few days ago and that was really good!

Black Bean & Corn Quinoa

Ingredients (serves 4 to 6)

  • 1/2 onion finely chopped
  • 3 cloves minced garlic
  • 3/4 cup uncooked quinoa
  • 2 cups organic veggie broth (plus a bit more for sauteing your onions and garlic)
  • 2 teaspoons ground cumin
  • 1/4 teaspoon cayenne pepper (optional – I used 1/8 tsp)
  • salt and pepper to taste
  • 1 cup frozen corn
  • 1 (15oz) can black beans drained and rinsed
  • Optional (Throw in a can of drained diced tomatoes – OR serve with some fresh salsa) – I added one can of Fire Roasted Diced Tomatoes with Garlic… YUM!
  • Chopped cilantro, to top (optional but good!)

Instructions

  • Saute onion and garlic in a few tablespoons of veggie broth over medium heat until soft and almost translucent.
  • Add the garlic when the onions are about 1/2 done…you may need to add a little more broth as they cook to keep them moist and keep them from sticking.
  • Mix in quinoa and cover with 2 cups veggie broth.
  • Season with spices and salt & pepper.
  • Bring to boil, reduce heat to low, and simmer until most of the liquid is gone…about 10 to 15min.
  • Stir in corn, black beans and diced tomatoes – continue to cook on low heat for about 5 more minutes until all liquid is absorbed and everything is heated through. (add a little extra veggie broth if needed)
  • Taste and season with additional sea salt if needed.
  • Enjoy!

Easy Seitan (the other “wheat meat”)

What is Seitan, you ask? It’s made from wheat but has little in common with flour or bread. Some call it “wheat meat”, “wheat gluten” or simply “gluten”. Seitan is surprisingly similar to the look and texture of meat when cooked, making it a popular meat substitute. Seitan is also high in protein, making it a great choice for those who do not eat meat yet want something to put Finger Lickin’ Good BBQ Sauce on! I make Seitan into “chicken” wings and nuggets, ribz, pulled pork-type sandwiches, meatloaf and a few other things. It can be boiled or steamed – this recipe is boiled, it’s the easiest one I’ve found and takes the least amount of time.

This recipe is from Post Punk Kitchen, one of my all-time favs! I serve this right out of the pot with Finger Lickin’ Good BBQ Sauce or I slice it and mix it with the same sauce for sandwiches. I know it may not look like what you’re used to but it’s really good!

* Homemade Seitan

1 cup vital wheat gluten flour
3 tablespoons nutritional yeast flakes
1/2 cup cold vegetable broth
1/4 cup soy sauce
2 tablespoons fresh lemon juice
1 tablespoon olive oil
2 cloves garlic, pressed or grated on a microplane grater

For the simmering broth: 
4 cups vegetable broth
4 cups water
1/4 cup soy sauce

Fill a stock pot with the water, broth and soy sauce, cover and bring to a boil.

In the mean time, in a large bowl mix together gluten and yeast.  In a smaller bowl mix together broth, soy sauce, lemon juice, olive oil and garlic. Pour the wet into the dry and combine with a wooden spoon until most of the moisture has absorbed and partially clumped up with the dry ingredients. Use your hands and knead for about 3 minutes, until it’s an elastic dough. Divide into 3 equal pieces with a knife and then knead those pieces in your hand just to stretch them out a bit. Let rest until the broth has come to a full boil.

Once boiling, lower the heat to a simmer. Add the gluten pieces and partially cover pot so that steam can escape. Let simmer for 45 minutes, turning occasionally. Turn the heat off and take the lid off, let sit for 15 minutes.

Remove from broth and place in a strainer until it is cool enough to handle. Slice and use as desired.
