Easy Curried Lentils & Spaghetti Squash

Things have been so hectic lately… my 4 month old has been up most of the past 5 or so nights and I’m so tired! He’s usually such a great sleeper, these sleep hiccups are tough but I know they usually don’t last long so I’m hopeful. My cooking slacks when I’m super tired so I’ve been making a few of my favorite easy dishes, this is one of them. My toddler likes this a lot and its easy for her to get on her fork so that makes her happy!

Easy Curried Lentils & Spaghetti Squash

This recipe is from Melomeals: Vegan For $3.33 A Day and it’s really good… not to mention easy to make!

Spicy Lentils and Spaghetti Squash
  • 1 tablespoon coconut oil
  • ½ teaspoon cumin seeds
  • 2 tablespoons curry powder – I used Kashmiri Curry powder from World Spice Merchant
  • 1 onion, diced
  • ½ poblano pepper (or green pepper), diced
  • Heaping ¼ teaspoon cinnamon
  • Crushed red pepper flakes to taste – (I omitted this in the main dish so my toddler would eat it)
  • 1 large carrot, diced
  • 5 big cloves garlic
  • 2-3 tablespoons chopped fresh ginger
  • Tony’s creole seasoning to taste – I used my creole seasoning from World Spice Merchant
  • 1 cup water
  • ½ cup salsa 
  • 2 cups cooked spaghetti squash (I used the boil method – drop whole squash into boiling water and cook for 20-30 minutes or until skin is easily pierced with a fork)
  • 1 cup cooked lentils
  • Juice of 1 lemon – used a Meyer lemon from my CSA 
  • ½ cup cilantro
  • Siracha to taste
  1. Saute the spices, onion, garlic, ginger, veggies and creole seasoning for several minutes.
  2. Add water, salsa, squash and lentils.
  3. Cover and cook over medium hi heat for 15 minutes
  4. Finish with juice of 1 lemon, siracha, cilantro and season with salt/pepper to taste
  5. ENJOY! serves 2

Yummy Bean Soup

This soup is delicious! It’s a little spicy and very satisfying with a side of toasted naan (if you eat bread, we do no more than twice a week) and a glass of red wine (or hemp milk for my toddler!). This recipe is from HealthyMammas.com – home of  the recently made Creamy Dreamy Superfood Pudding and Black Bean & Corn Quinoa (2 more fabulous recipes!).  This recipe is toddler approved, she ate the whole bowl but she commented on it being “spicy Mommy spicy” the whole time… you may want to back off the chili powder if you have a spice sensitive child. My daughter will eat wasabi peas and dried chili mango so she may be the exception. 🙂

Bean Soup

Ingredients (Serves 6-8)

  • 1 7/8 lbs 15 bean soup mix (I used the 8-bean soup mix from my CSA – about 5 1/2 cups)
  • 1 quart low sodium vegetable broth
  • 1 tablespoon olive oil (you can use veggie broth or water to sauté instead – I used broth)
  • 1 large onion, chopped
  • 1 garlic clove, chopped
  • 1 box frozen chopped spinach, or 10 oz of fresh, chopped spinach (I used fresh – 2 bunches organic spinach)
  • 2 carrots, thinly sliced (I used leftover shredded carrots from Healthy Veggie Muffins)
  • 1 (15 ounce) can diced tomatoes, undrained (I used fire roasted with garlic)
  • 8 tablespoons lemon juice (about 2 lemons worth) – this makes it!!
  • 2 bay leaves
  • 3 dashes Tabasco sauce (Didn’t have any so I used a big squirt of Sriracha)
  • 1 tablespoon oregano
  • 2 teaspoons chili powder
  • 2 teaspoons ground thyme
  • 1 teaspoon cayenne pepper
  • 1/2 tablespoon ground black pepper
  • 1/2 tablespoon salt (optional)

Instructions

  • Soak beans overnight, or at least 8 hours. Drain and rinse.
  • Cook beans in water until just tender by simmering on the stove in 2 qts. water for 1 1/2 hours. (or more) (Can also cook in slower cooker or pressure cooker.).
  • Shortly before the beans are done, saute onion and garlic in oil (or veggie broth) until slightly brown.
  • When beans are done, drain half the cooking water.
  • Add all remaining ingredients and simmer, uncovered, for 40-60 minutes, stirring occasionally. Adjust seasoning to taste.

Beans are cooked, adding in remaining ingredients (except spinach)

Raw Collard & Apple Salad

I love my greens! I enjoy hearty meal-type salads and I’ve been making a few lately that we really enjoy! Kale is my go-to salad green but I’ve been trying to venture out. I came across this Raw Collard and Apple Salad from my latest favorite vegan food blog MELOMEALS: Vegan for $3.33 A Day. You can use collard greens or kale – I used collard greens. I love the spiciness of the dijon mustard with the sweetness of the raisins! I’ve been eating this with my collard wraps for lunch, it’s just so awesome that it keeps in the fridge and doesn’t wilt and sog like regular salad!

Raw Collard and Apple Salad

Yummy!

Raw Collard Salad
4 c finely chopped collard greens
½ c diced celery
2 c diced or shredded carrots
2 c apples, diced ( toss with ½ t apple cider vinegar before adding to salad )
4 T toasted sesame seeds
1 c golden raisins
1 t chunky sea salt ( less if using fine salt )
2 t onion powder
Pinch stevia powder or 3 T agave or honey
¼ t cinnamon
Pinch nutmeg
¼ t white pepper
3 T olive oil
2 T Dijon mustard
3 T apple cider vinegar
Toss everything together with your hands. Allow salad to sit for an hour ( or overnight ) before eating. Taste and adjust seasonings.

Collard Greens... in case you didn't know 🙂

Strip leaves off of the tough stem (chop stem and add to soups for extra fiber)

I roll the leaves and chop them this way, then chop them again into smaller bites

Add chopped celery

then carrots... I like extra carrots...

chop your apples and add

toast your sesame seeds until fragrant - I use my cast iron pan (dry)

Add sesame seeds and golden raisins

Combine dressing ingredients

Add to salad

Mix together with your hands, let sit in fridge for a few hours or overnight before serving
