Healthy Carrot Cake Donuts

I’ve been searching for easy’ish, healthy, plant-based, whole foods breakfast and lunch ideas to pack for our daughter to bring to preschool. It’s not easy, that’s for sure! I came across these donuts and had to try them! The school provides meals but I wasn’t too happy with the menu so I opted to send food with her. Donuts and chocolate milk were one of the breakfast options… yeah, um no thank you. THESE donuts she can eat!

These donuts are awesome! You can also make this batter into muffins if you don’t own a donut pan. I bought one from Amazon just to make these, I was so excited about the idea!

Carrot Cake Donuts

I found this recipe on Straight Up Food whole foods, plant-based food blog. She has a bunch of really great recipes, take some time to check out her site!!

Carrot Cake Donuts

Ingredients
5 Medjool dates, pitted and chopped
1/4 cup golden raisins
1/2 cup water

1 3/4 cup rolled oats
2 teaspoons baking powder
2 teaspoons cinnamon
1 teaspoon baking soda
1 teaspoon ground nutmeg
1/4 teaspoon ground clove

1/2 of a ripe banana, diced
1 cup rice milk or almond milk
1 1/2 cups grated carrots
1/2 cup golden raisins
1/2 cup walnuts, chopped

Directions
1. Preheat oven to 350 degrees with rack in center position. In a small bowl, combine the 5 dates, 1/4 cup raisins and 1/2 cup water. Let soak while you prepare the other ingredients (at least 15 minutes).

2. Grind the rolled oats in a high-speed blender until it resembles flour; transfer to a large bowl. Add to this the baking powder, soda, cinnamon, nutmeg and clove, and mix with a fork.

3. Transfer the soaked dates, raisins and water to a high-speed blender and blend until smooth (about 30 seconds). Add the banana and non-dairy milk and blend further until everything is smooth. Add this wet mixture to the bowl of dry ingredients and gently fold together using a big spoon; now fold in the carrots, raisins and walnuts. The batter should be somewhere between a cake batter and cookie batter in consistency.

4. Using a soup spoon, spoon batter into a non-stick donut pan, filling to the top and smoothing batter flat. Bake for 20-25 minutes (I like to bake mine for 20 because it produces a moister cake). If you press on the cake lightly and it bounces back a bit (instead of staying indented), it’s likely ready. These continue to set up as they cool.

5. Remove from oven and cool for 5-7 minutes before removing the donuts from pan (if left in too long it will be hard to get the donuts out). Using a plastic fork, gently go around the donuts (outside and inner circle) to loosen them from the pan. Even though we’re using a non-stick pan, we are not using any oil so we need to help them out a bit. After loosening the edges, invert onto a cutting board (shake a bit if still not coming out the first time) and let cool at least 5-10 minutes more before serving plain or with the below frosting.

Carrot Cake Frosting

I tried making this with all tofu (no cashews) and the tofu taste was too strong. When I tried it will just cashews (which are great soft nuts to use in gravies, dressings and desserts), the flavor was also too much, too cashew-y. But with the addition of just 2 tablespoons of tofu with the cashews, the flavor of traditional carrot cake frosting has been approximated (I think; you let me know what you think). Feel free to vary the nuts and tofu to your liking. Both add to the thickness and richness of the frosting.

Ingredients
5 dates, pitted and chopped
1/2 cup raw cashews (not salted or roasted)
3/4 cup water

3 tablespoons lemon juice
1 teaspoon vanilla extract
2 tablespoons tofu (silken or firm)
1/4 cup water (plus 2-3 more tablespoons as needed)

Directions
Soak the dates and cashews in 3/4 cup water for 15-30 minutes. After soaking, drain off the soak water into a bowl. In a high-speed blender, combine all ingredients (measuring out the 1/4 cup water+ from the soak water) and blend until very smooth, adding more water as needed to reach desired consistency. Frost donuts or muffins just before serving them. (Since there is no oil or sugar in this frosting it will not harden up like regular frostings.) Frosting will keep refrigerated for 3-5 days.

Prep time: 25 minutes (donuts), 15 minutes (frosting)
Cooking time: 20-25 minutes (donuts)
Makes: 10-12 donuts or muffins; 1 cup frosting

Soak dates and raisins

Grind oats into flour

Combine flour and spices together with fork

Process dates/raisins with flour mixture – add banana and milk

Fold in carrots, walnuts and raisins

Spoon into donut tin

Bake at 350 for 20-25 minutes. Let cool for 5 minutes before removing from pan

Let cool on rack before frosting

Add soaked dates and nuts, lemon juice and other frosting ingredients until smooth

Yummy frosting!

Frost and enjoy!

Homemade Larabars

Up until recently, Larabars were a staple in this house! Recent information regarding Prop 37 (GMO labeling of foods) came to my attention and made me change my mind. Do you know Larabar is owned by General Mills and they have contributed $520,000 to defeat proposition 37? Yowzas! Sounds guilty of using GMO foods to me!

Well, it’s time to make my own Larabars then! These are pretty easy and you can make a variety of flavors. Both our kids LOVE them! Everyone at my Crossfit gym loved them too 😉 The Key Lime Pie was the favorite flavor!

Homemade Larabars

I made Key Lime Pie and Almond Cookie flavors but plan on making more. More recipes posted below photos. Enjoy!

Key Lime Pie

  • 1/2 cup raw cashews
  • 1/2 cup Seedless/Pitted whole Dates
  • dash of sea salt (optional)
  • Zest of 1 lime
  • 1/2 tbsp lime juice
  • 1/3 cup shredded coconut

Almond Cookie

  • 1/3 cup Seedless/Pitted whole Dates
  • 1/2 cup raw almonds
  • dash of sea salt (optional)
  • 1/4 tsp vanilla

Place the dates and fruit (depending on flavor) in a food processor. Blend until it becomes like a paste. Transfer blended dates and fruit (if using) to a bowl.

Add the nuts to the processor and pulse until chopped fairly small (but not too much, not nut flour. You want texture). Add the nuts, along with the sea salt, to the bowl with the fruit/date paste. Use your fingers to knead the nuts into the paste.

Next you can spread the mixture out onto a plate covered in cling wrap. Using your hands mold the mixture into individual bars. Wrap each separately in plastic wrap or in small ziplocks. It is a good idea to refrigerate the bars after making to maintain freshness and let the form set (try to let them set in the fridge for 20 minutes before you eat one).

* I also like to just roll these into ball shapes and use them as “power balls” for on the go, perfect for my kiddos! You can also use a cookie cutter to make them into cute shapes. I cut them into little squares too.

*If you find your Larabars are a bit crumby add a couple tbsp of warm water and process again.

Process dates into a paste. Add fruit to this mixture if you’re using a fruit recipe.

Process nuts into smaller pieces

Here’s my almond batch

Knead the mixture together, spread “dough” onto plastic wrap on line a glass dish with plastic wrap and press into the dish

Portobello Mushroom Pizzas

Life has been so crazy lately, I feel like I can’t catch up on the things I need to do! It’s been a great summer so far… our 10-month old is kinda almost walking and our 2 1/2-year old is hilarious with her ever growing vocabulary. Sorry I’ve lagged on posting recipes lately but things have been nuts! Hope all is well with you and your family!

Ok so pizza, who doesn’t enjoy pizza?! Pizza on portobello mushrooms? What’s better than that! No bloated processed pizza crust feeling, no processed food headache… you can have pizza ALL THE TIME this way!

Portobello Mushroom Pizzas

My hubby loved this so much he asked me to make it again this week. His last favorite, Ancho Lentil Bowls with Low-fat Vegan Cheese is fading out of heavy rotation here so we needed something new. Our toddler LOVED this pizza too, she ate a whole one and asked for more. We felt bad since we had already eaten the rest so I’ll have to make more next time.

Portobello Mushroom Pizzas

* 6-8 Portobello mushrooms (allow for at least two per person… three if you’re really hungry)

* 2 cups pizza sauce – I LOVE the Muir Glen Pizza Sauce when I don’t have time to make homemade. Use your favorite.

* Cashew Basil Cheese (see recipe below)

* Chopped roasted red & yellow peppers – I used half a jar of Trader Joe’s fire roasted red & yellow peppers in water

* 1 green pepper, chopped

* 1 medium onion, diced

* 1 can black olives, chopped

* fresh basil, chopped (add on top OR use dried italian seasoning)

* 1/2 – 1 tsp red pepper flake

Directions:

* Preheat oven by setting the broiler on low or just broil if that’s the only setting you have.

* Take a baking sheet and cover with a silicone non-stick baking mat or parchment paper for easy clean up.

* Make your Cashew Basil cheese (see below). Set aside.

* Remove stems of Portabellas and gently rub Portabellos with a wet cloth to clean. Place Portabellas ‘belly’ side up on the baking sheet.

* Spoon about 2 tablespoons of pizza sauce into each mushroom. Now spoon about 2 – 4 teaspoons of Cashew Basil Cheese on top of the pizza sauce (see recipe below).

* Top the portobellos with remaining ingredients, sprinkle with fresh basil and/or italian seasoning and a sprinkle of dried red pepper flake.

* Broil in the oven on the lowest temperature setting on the middle rack for about 10-12 minutes, watching closely as broiler temperatures vary. Serve immediately and enjoy!

The cashew nut cheese is an excellent addition to these pizzas! You could also use the Pizza Cheese recipe from a few weeks ago, that would be GOOD! I changed the original recipe to suit our tastes and nutritional needs. I plan on making the Goaty Cashew Cheeze (Thank you Melomeals!) next time and experimenting with different toppings. The possibilities are endless!

Cashew Basil Cheese

Ingredients:
• 1 cup raw cashews
• 1/3-1/2 tsp Himalayan sea salt, to taste
• 1/2 tsp leftover bean cooking liquid (or liquid from canned beans…. or water, that will work too!)
• 1 fresh basil leaf – I didn’t have this last time I made it so I added 1 tsp dried basil
• 1 small clove garlic
• 1.5 tbsp nutritional yeast
• 1 tbsp fresh lemon juice
* 1 tsp yellow miso paste
Directions: Place 1 cup of raw cashews in a bowl of water, cover, and soak overnight in the fridge. When cashews are ready, drain and place all ingredients (cashews, Himalayan sea salt, bean liquid/water, basil, garlic, nutritional yeast, miso and lemon juice) into a food processor and process until smooth, stopping to scrape sides of processor as necessary. Taste and adjust seasonings if necessary.

Place ingredients into food processor and process until smooth’ish… like a chunky ricotta cheese consistency

Ready for pizza! Or collard wraps, or salad…. hmmm…..

Remove stems, wipe mushrooms with damp cloth to clean, place on cooking sheet and fill “gill” sides with pizza sauce.

Add your dollops of Cashew Basil Cheese first, then follow with all your toppings!

Ready to broil!

Yummy!

Portobello Pizza goodness!

Real-Deal Nacho Cheeze

I haven’t made this in awhile… not because it’s not THE BEST NACHO CHEEZE EVER but because making this leads to a large consumption of chips and other snacks type things we don’t really eat too often. Yes, I know people need to splurge every now and when we do it’s for this sauce and these nachos! I usually double this recipe and mix it in my VitaMix. I use my TVP Meat with Hidden Greens recipe for the “meat” part of our nachos… my family loves this for nachos, burritos, tacos and anything with a Mexican flair!

For a really good bean dip, add a single batch of this nacho cheese to this bean dip recipe and stir to combine. Serve in a small crockpot to keep warm – good with chips of any kind!

1 can refried beans
1/2 cup vegan sour cream
small can chopped green chiles
1 packet taco seasoning – or a batch of the homemade taco seasoning
1 green onion, chopped (optional)

P.S. I made this for my Grandpa and Uncle, SERIOUS MEAT EATERS from Colorado… they had no idea it was dairy-free!! They were confused when I told them… “what do you mean it’s cheese without cheese??” 😉

Real-Deal Nacho Cheeze

Real-Deal Nacho Cheeze

  • 1/4 cup raw cashews
  • 1 1/2 cups cold water
  • 2 ounces pimientos (half of a 4 oz. jar)
  • 2 tablespoons cornstarch
  • 2 tablespoons nutritional yeast flakes
  • 1 tablespoon lemon juice
  • 1/2 to 1 teaspoon salt
  • 1 (4 ounce) can diced green chilies (optional but SO GOOD!)

INSTRUCTIONS

1. Soak cashews in hot water while combining the remaining ingredients (except chiles) in a blender. If you don’t have a high powered blender, soak cashews for an hour or two in hot water first.

2. Add cashews to blender and process on high for 1-2 minutes.

3. Cook in a sauce pan over medium heat, stirring constantly, until thick. Add chiles and serve or use in other recipes that call for cheese sauce.

Blend ingredients except for cashews

Add cashews and blend for 1-2 minutes

Done blending

Heat and stir until thickened

Add green chiles (if using)

Ready to serve! Tell me that doesn't look like the real thing!?!

YUMMY NACHOS!!!

* Another good vegan cheese recipe for ya!

Kool Ranch Kale Chips

WOW these are good! I’ve made a ton of kale chips in the past but these are my new favorite!! I used my dehydrator to make these but you can use a regular cookie sheet lined with parchment paper if you don’t have one.

Kool Ranch Kale Chips

Kool Ranch Kale Chips

1 cup raw cashews, soaked in hot water for 1 hour to soften

-1 bunch of kale – I used lacinato/dinosaur kale but it would be good with any kind

-1/8 – 1/4 cup water

-1 Tbsp apple cider vinegar

-1 Tbsp nutritional yeast

-1 tsp dried parsley

-1/4 tsp garlic powder

-1/4 tsp dried dill

– 1/4 tsp onion powder

– 1/4 tsp ground black pepper

-1/4 tsp sea salt

-1/4 red onion, chopped

-paprika and extra sea salt for pre-dehydration sprinkling

1.) Blend (great in a VitaMix!) the cashews, water and seasonings in a blender until smooth. Place mixture in the bottom of a large mixing bowl and add the chopped onions.

2.) Wash the kale and remove the stems. Tear off chip-sized pieces of the kale and add to the bowl. Using your hands, massage the mixture onto the kale bites so that each piece is well coated.

3.) Transfer the kale to your dehydrator or parchment lined baking sheet and sprinkle with paprika and additional sea salt.

4.) Dehydrate for 5-8 hours at 115 degrees – my dehydrator took about 5 hours

** If you use the oven method,  spread kale chips on a cookie sheet and bake in the oven until crisp, on the lowest setting with the door slightly ajar.

Blend cashews, seasoning and water

Add to bowl with onions

Wash kale, remove stems, tear into chip pieces and add to bowl

Massage mixture into each piece and transfer to baking sheet or dehydrator, top with salt & paprika

Dehydrate for 5-8 hours at 115 degrees

Yummy!

Bet you can't eat just one!

Creamy Dreamy Superfood Pudding

Happy Birthday to our daughter, she turned two years old today! I made this pudding yesterday for her birthday dessert tonight – her dessert is usually fruit so this was a treat!

She LOVED it! Can you tell?

When I saw this recipe on HealthyMammas.com, I just had to make it! As they put it ” how else can you find a way to get in your Chia Seeds, Hemp Seeds, and Coconut Oil in one sitting?” My thoughts exactly!

Ingredients
  • 2 cups water
  • 1 cup cashews (use RAW cashews, bulk section at Sprouts)
  • 1/2 cup hemp seeds – (I used whole and shelled, all I had)
  • 1/2 cup coconut sugar – (I used brown sugar, all I had but I will use coconut sugar next time! Buy at Sprouts)
  • 1/4 tsp sea salt
  • 2 tsp vanilla extract
  • 1/2 cup coconut oil (I used a little less)
  • 2 ½ Tbsp chia seeds (You can buy them here on Amazon, best price I’ve found and free shipping!)
Instructions
  1. Soak the cashews in water for 4-6 hours. When finished rinse the cashews with water and strain. (don’t leave this part out! I made it without and with soaking – huge difference!)
  2. If coconut oil is solid place in a pan or double boiler on the lowest temperature possible. (or stick in the microwave for about 6 seconds) Once oil becomes a clear liquid turn the heat off. Coconut oil should melt at 80 degrees Fahrenheit.
  3. Place the water, the soaked cashews, the hemp seeds, the coconut sugar, the salt, and the vanilla extract in a high-speed blender. (My Vitamix was PERFECT for this)
  4. Blend on high until you have a nice creamy consistency.
  5. Turn the blender on low and while it is running slowly pour in the melted coconut oil. Place the lid back on and run the blender on high for a few seconds.
  6. Turn the blender on low and slowly pour in the chia seeds. You will want to make sure the chia seeds stay whole. (important, I also tried this with and without keeping them whole. My recommendation is to keep them in tact.)
  7. Place mixture in a sealed container (a quart size mason jar works great) and refrigerate over night. Super Food Chia Pudding is great topped with cacao nibs and hemp seeds or fresh berries.
  8. It will be runny when you pour it out of the blender but don’t worry, it will set up in the fridge.
Notes

Makes 4 cups, or approximately 6-8 servings.

I topped this with mini vegan chocolate chips, yummy! I can’t wait to try berries!
 Thank you Healthy Mammas!!!
